- Ice cream sandwiches- This recipe uses the rectangular store-brand ice cream sandwiches with soft chocolate cookies. Most brands fit perfectly into a 9X13 pan.
- Cool whip- Cool whip is used for this rather than homemade whipped cream as it has stabilizers which will help in this cake.
- Oreos- Any variety of Oreos will work for this. You can even substitute in your favorite cookie variety.
- Mini M&M's- I prefer the mini M&M for this because they are small enough that they do not make the cake more difficult to cut or eat, but regular can be used if you do not mind that. You can even use different candies, but try to keep them cut down to small sizes to avoid those issues with cutting!

- Gluten free- I haven't tested this gluten free. Let me know if you do.
Step By Step Instructions
Here is how to make this ice cream sandwich cake.
STEP 1: Prep. Get a 9X13 pan and spray it with nonstick baking spray.
STEP 2: First layer. Unwrap 12 of the ice cream sandwiches and layer them on the bottom of the pan. They should fit snugly for a single layer.
STEP 3: Spread cool whip. Pour one tub of cool whip on top and spread it with an offset spatula.
STEP 4: Add sauces and candies. Drizzle the chocolate sauce and caramel sauce over the top of the cool whip. Have fun with it and add however much your heart desires. Then sprinkle half of the Oreos and mini M&Ms on it.
STEP 5: Second ice cream layer. Unwrap the remaining ice cream sandwiches and lay them over the toppings. They should make a snug layer. It is okay if the cool whip pushes up around them some.
STEP 6: More cool whip. Add the second tub of cool whip over the top of the ice cream sandwiches. Spread it with an offset spatula.
STEP 7: More toppings! Drizzle more chocolate and caramel sauce on top. Add your remaining Oreos and M&Ms. You can even add some sprinkles for fun if you have them.
STEP 8: Chill. Cover the pan with aluminum foil and place it in the freezer for at least 2 hours before serving.
Expert Baking Tips
- Make sure to spray the pan thoroughly with the baking nonstick spray so that the bottom of the ice cream sandwiches does not stick to it. It can be challenging to get nice pieces out if they stick.
- Do not pull the ice cream sandwiches out of the freezer until you are ready to use them. They can start to melt quickly and become very messy if they are out too long.
- If the ice cream sandwiches do not make a perfect layer in your pan you can cut some of them with a sharp knife to fill in the edge of the pan if needed.
- Cool whip is often kept frozen, but should be defrosted before being spread over the ice cream sandwiches. If frozen it will be too stiff. If you forget you can place your ice cream in the freezer to stay frozen while you defrost the cool whip.

Yes, you can use less of the ice cream sandwiches than the recipe for an 8X8 or 9X9 recipe. It may not be a perfect fit, but you can cut them to make it work as needed.
This recipe can be made up to 5 days in advance. After that point the texture will begin to be affected as the chocolate and caramel sauce begin to melt into the ice cream sandwiches.
Recipe Variations
- Ice cream flavors- This recipe can be made with any variety of ice cream sandwich including chocolate or Neapolitan ice cream. If you combine two flavors I recommend keeping one half of the pan each flavor as kids love to have a choice of which flavor they get.
- Alternate candies- If you wish to replace the M&Ms with another candy you can use any that you prefer or chocolate chips. Just make sure they are small enough or are cut up enough that you do not have a large frozen chunk that is difficult to cut or chew.
- Fruit topping- If you want to add a fresh fruit wait to add it until you are serving. fresh strawberries work great. If you want to add strawberry in advance you can use a strawberry sauce instead.

- Baking spray: I use the nonstick spray that has flour in it.
- Offset spatula: I use this to easily spread the frosting or fillings.
- 9X13 pan- I love using a casserole pan instead of a normal baking pan.
Storing and Freezing
Store the ice cream sandwich cake in a covered container in the freezer for up to 5 days. You can seal the pan you made it in with aluminum foil or move it into Tupperware containers for storage.

- Drizzle the chocolate and caramel sauce. Top with the remaining Oreos and mini M&M's. Optional: add sprinkles too!
- Cover with foil and place in the freezer for at least 2 hours before serving.
