These 4th of July cookies are lemon cheesecake cookies stuffed with red, white, and blue cheesecake. The lemon cookies are topped with patriotic sprinkles.

STEP 1: Beat the cream cheese, sugar, and vanilla. Separate into 3 bowls and dye. 

STEP 2: Place 1/2 Tbsp. dollops on prepared baking sheet and freeze for at least 30 minutes. 

STEP 3: Combine dry ingredients. Set aside. 

STEP 4: Beat the butter and sugar. Add wet ingredients.

STEP 5: Mix dry ingredients into the wet ingredients. Let dough rest for 10 minutes. 

STEP 6: Scoop large dough balls. Press an indent and add the dyed dollop. Fold dough back  to cover it. 

STEP 7: Roll balls in sprinkles. Bake 6 balls per sheet for 14-16 minutes.
