Ultimate Biscoff Cheesecake

This Biscoff cheesecake is the ultimate Biscoff cheesecake! It has a Lotus Biscoff cookie crust, a baked cheesecake filled with both cookie butter and chopped cookies.

STEP 1: In a medium bowl, mix fine Biscoff cookie crumbs, brown sugar, and melted butter. 

STEP 2: Compact crust into the bottom and sides of a 9 inch springform pan. Bake for 13 minutes. 

STEP 3: Beat cream cheese on high for 1 minute. Add sugar and beat again.

STEP 4: Mix in Biscoff cookies spread, sour cream, heavy cream, and vanilla until smooth. Mix in eggs one at a time until combined. 

STEP 5: Fold in Biscoff cookie crumbs with a rubber spatula. Pour cheesecake in the springform pan.

STEP 6: Bake in a water bath for 60-70 minutes. Turn off the oven and prop the door to allow cheesecake to cool for 30 minutes. 

STEP 7: Cool completely on a cooling rack. Chill in fridge overnight. Pour melted cookie butter over cheesecake and top with extra Biscoff cookies.
