Cinnamon Peach Stuffed Cupcakes

These cinnamon peach cupcakes are peach pie filling stuffed inside cinnamon cupcakes and topped with a cream cheese frosting.

STEP 1: Beat butter, brown sugar, and oil together for 2 minutes. Add vanilla, eggs, and sour cream. Mix it in.

STEP 2: Add half of the flour, baking powder, baking soda, salt, and buttermilk. Mix them in and then add the other half.

STEP 3: Scoop batter into cupcakes liners until they are 2/3 full.

STEP 4: Bake the cupcakes for 15-18 minutes at 350°F.

STEP 5: While the cupcakes cool, cook the peaches, brown sugar, cornstarch, and lemon juice over the stove.

STEP 6: Cut the cores out of the cupcakes and stuff them with the peach filling.

STEP 7: Beat butter and cream cheese for 2 minutes. Mix in powdered sugar and vanilla extract and beat it. Then, frost the cupcakes.
