Cookie Dough Cupcakes

These cookie dough cupcakes are rainbow sprinkle funfetti cupcakes. They are filled with edible cookie dough (no eggs!).

STEP 1: Mix the butter, sugar, and oil on high for 3 minutes. Add vanilla and eggs and mix until combined. 

STEP 2: Add in dry ingredients and buttermilk. Fold in sprinkles with a spatula. 

STEP 3: Fill the muffin tins. Bake for 20-23 minutes. 

STEP 4: Edible Cookie Dough. Beat the butter, brown sugar, and sugar. Add vanilla and milk.

STEP 5: Add in dry ingredients and mix until combined. Fold in chocolate chips. 

STEP 6: Fill  the middle of the cupcakes with cookie dough and compact.

STEP 7: Cookie Dough Frosting. Beat the butter and cream cheese. Add in vanilla, heavy cream and remaining cookie dough.   Pipe onto cupcakes.
