Layered Funfetti Cake

This layered funfetti cake is a moist three layered funfetti cake full of cream cheese frosting. You can't have a birthday without funfetti cake!

STEP 1: Beat the butter, oil, and sugar for 3 minutes on high. Add in vanilla extract and sour cream. Add in eggs one at a time. 

STEP 2: Alternate adding 1/3 of the dry ingredients and 1/2 of the buttermilk until all has been added. Mix on low.

STEP 3: Fold in sprinkles with a rubber spatula. 

STEP 4: Pour batter evenly into 3 8-inch cake prepared cake pans. Bake for 18-23 minutes. Cool completely. 

STEP 5: Cream cheese frosting. Beat butter and cream cheese on high for 3 minutes. Add in sifted powdered sugar on low speed. Mix in vanilla, salt, and heavy cream until creamy.

STEP 6: Assembly. Freeze cake layers for 10-15 minutes. Add a small bit of frosting to the cake board and place down the first layer.  Spread 3/4 of a cup of frosting on top. Repeat until assembled. 

STEP 7: Frost with a thin layer of frosting and freeze for 15 minutes. Frost the rest of the cake and top with sprinkles.
