Gingerbread Cheesecake

This gingerbread cheesecake has a gingersnap crust with a baked creamy gingerbread cheesecake. It is topped with salted caramel.

STEP 1: Blend Tate's cookies into fine crumbs and mix with melted butter. 

STEP 2: Pour crust into the prepared springform pan. Compact crust and bake for 14 minutes. 

STEP 3: Beat the cream cheese and sugar on high. 

STEP 4: Add wet ingredients and eggs. 

STEP 5: Pour the cheesecake onto the crust. Bake in a water bath for 70-80 minutes. 

STEP 6: Cool cheesecake slowly. Chill overnight in fridge. 

STEP 7: Make salted caramel. Pour over the cheesecake.
