Gingerbread Mini Cheesecakes
These mini gingerbread cheesecakes have a cinnamon graham cracker crust, spiced gingerbread cheesecake, and whipped cream.
STEP 1: Mix graham cracker crumbs, cinnamon, brown sugar, and melted butter together for crust.
STEP 2: Beat cream cheese and brown sugar. Mix in molasses, sour cream, and spices.
STEP 3: Add in eggs on low.
STEP 4: Add the cheesecake batter on top of crust.
STEP 5: Bake for 18-20 minutes. Cool overnight.
STEP 6: Remove wrappers and top with whipped cream.
STEP 7: Optional: Top with gingerbread men.
