These caramel pumpkin cheesecake bars are an easy to make baked pumpkin cheesecake topped with a homemade caramel sauce!

STEP 1: Cook sugar until it melts. Add butter and cook more. Then, add heavy cream, vanilla, and salt to make caramel.

STEP 2: Mix graham cracker crumbs, brown sugar, and melted butter to make a crust. Bake it for 11 minutes at 325.

STEP 3: Beat cream cheese and sugar for 2 minutes.

STEP 4: Mix in sour cream and pumpkin puree. Then, vanilla extract, salted caramel, pumpkin pie spice, cinnamon, and nutmeg. Finally, add eggs.

STEP 5: Pour the batter onto the crust and bake it for 40-45 minutes.

STEP 6: Let it cool, then chill it in the fridge overnight.

STEP 7: Top the cheesecake with caramel and serve it!
