Homemade Strawberry Mousse Cake

This strawberry mousse cake is a super soft white cake. It is topped with a strawberry mousse and fresh strawberries. The strawberry mousse is light and fluffy.

STEP 1: Beat the butter, oil, and sugar. Add remaining wet ingredients. 

STEP 2: Add the dry ingredients to the wet ingredients 1/3 at a time until combined. 

STEP 3: Pour the batter into the prepared pan. Bake for 35-40 minutes until done.  

STEP 4: Strawberry mousse. Puree the strawberries and strain them. Cook the puree, sugar, and vanilla until thickened. 

STEP 5: Prepare and add gelatin. Chill completely. 

STEP 6: Beat heavy cream until there are stiff peaks. Add in freeze dried strawberries and gently fold in puree. 

STEP 7: Spread strawberry mousse over the cooled cake and decorate with strawberries.
