Lemon Bar Cupcakes

These lemon bar cupcakes are super moist lemon cupcakes filled with lemon bar filling and topped with lemon cream cheese frosting and more lemon bar filling.

STEP 1: Heat lemon bar filling ingredients until thickened. Add cubed butter. Cool completely. 

STEP 2: Beat the butter and sugar. Add the wet ingredients. 

STEP 3: Alternate mixing in 1/3 of the flour mixture and 1/2 the buttermilk until just combined.  

STEP 4: Fill the muffin liners 2/3 full and bake 16-18 minutes. 

STEP 5: Frosting. Beat the butter and cream cheese. Add sugar, lemon zest, and salt. 

STEP 6: Cut a hole halfway down in the middle of the cupcake. Fill with lemon bar filling. 

STEP 7: Spread a large scoop of frosting on top with an offset spatula. Top with more lemon bar filling.
