Lemon Poppy Seed Cookies

These lemon poppy seed cookies are lemon dough filled with lemon cheesecake. There is a cute little lemon piped on top, too!

STEP 1: Beat cream cheese, sugar, and lemon zest for 1 minute. Place scoops on a cookie sheet in the freezer.

STEP 2: Mix flour, baking soda, salt, and poppy seeds.

STEP 3: Beat butter and sugar for 2 minutes.

STEP 4: Add lemon zest, egg, and egg yolk. Mix in the dry ingredients on low speed.

STEP 5: Use a large cookie scoop to scoop the dough. Press a hole in each and place a frozen cheesecake dollop inside.

STEP 6: Place 6 cookies per cookie sheet. Bake at 350° for 13-15 minutes.

STEP 7: Beat butter and cream cheese for 2 minutes. Add powdered sugar and vanilla. Dye it green and yellow to pipe lemons!
