Lemon Poppy Seed Cupcakes
These lemon poppy seed cupcakes are just like lemon poppy seed muffins except their texture is super moist and they are topped with the creamiest lemon cream cheese frosting.
STEP 1: Beat butter and sugar. Add in lemon zest, lemon juice, and eggs.
STEP 2: Add in dry ingredients and poppy seeds.
STEP 3: Scoop and fill a muffin tin. Use a cookie scoop for easier scooping.
STEP 4: Bake for 16-18 minutes. Cool completely before decorating.
STEP 5: Lemon frosting. Beat butter and cream cheese. Add in powdered sugar.
STEP 6: Add in lemon zest, lemon juice, and heavy cream.
