This mini carrot cake is the perfect cake for Easter for two or a small party! This is a moist, spiced, 6-inch three layer carrot cake.

STEP 1:
Mix the oil, brown sugar, white sugar, vanilla extract, sour cream, shredded carrot, and eggs.

Add in flour, baking powder, baking soda, salt, and warm spices.

Pour the batter into three six-inch cake pans. Bake for 20-25 minutes. Cool completely.

Beat the butter and cream cheese on high for 3 minutes.

STEP 5: Add in powdered sugar, vanilla, salt, and heavy cream and mix on low.

STEP 6: Spread 3/4 cup of frosting per cake layer. Frost the cake in the frosting.
