Mini Carrot Cake

This mini carrot cake is the perfect cake for Easter for two or a small party! This is a moist, spiced, 6-inch three layer carrot cake.

STEP 1: Mix the oil, brown sugar, white sugar, vanilla extract, sour cream, shredded carrot, and eggs.

STEP 2: Add in flour, baking powder, baking soda, salt, and warm spices.

STEP 3: Pour the batter into three six-inch cake pans. Bake for 20-25 minutes. Cool completely. 

STEP 4: Cream Cheese Frosting. Beat the butter and cream cheese on high for 3 minutes.

STEP 5: Add in powdered sugar, vanilla, salt, and heavy cream and mix on low.

STEP 6: Spread 3/4 cup of frosting per cake layer. Frost the cake in the frosting. 

STEP 7: To decorate, pipe on extra frosting and chopped walnuts.
