Mini Chocolate Cheesecakes

These mini chocolate cheesecake have four layers of chocolate! They have an Oreo crust, creamy baked chocolate cheesecake, chocolate ganache, and a chocolate whipped cream.

STEP 1: Oreo crust. Use a food processor to crush Oreos into fine crumbs. Mix in melted butter with a fork.

STEP 2: Scoop 1 Tablespoon of crumbs into a muffin tin and compact down. 

STEP 3: Beat cream cheese for one minute. Add in cocoa powder, sugar, heavy cream, sour cream, vanilla, and eggs. 

STEP 4: Fill muffin liners with batter. Bake for 19-22 minutes. Cool completely and store in fridge overnight. 

STEP 5: Chocolate ganache. Heat heavy cream until steaming. Pour over chocolate chips. Stir until smooth. 

STEP 6: Use 1/2 Tablespoon to scoop ganache onto each cheesecake. Smooth. Chill for 10 minutes.

STEP 7: Chocolate whipped cream. Beat heavy cream, powdered sugar, cocoa powder, and vanilla. Pipe on top of the mini cheesecakes.
