Mini Egg Cookies

These mini egg cookies are the perfect cookies to make for Easter! They are chewy large chocolate chip cookies with crisp edges. They are full of chopped mini eggs.

STEP 1: Smash the mini eggs in a Ziploc bag with a rolling pin. 

STEP 2: Beat the butter, brown sugar, and sugar on high for 2 minutes. 

STEP 3: Add in vanilla and eggs. Beat on medium high for 1 minute. 

STEP 4: Add in dry ingredients. Mix on low until combined. 

STEP 5: Fold in chocolate chips and mini eggs. Chill dough.

STEP 6: Use a large cookie scoop to scoop 6 cookie dough balls per cookie sheet. 

STEP 7: Bake for 13-15 minutes. Top with extra mini eggs and chocolate chips.
