Mini Vanilla Cake

This mini vanilla cake is a perfect cake for two or for a small birthday party. This is two small fluffy vanilla cake layers filled with cream cheese frosting.

STEP 1: Beat the butter, oil, and sugar until fluffy. 

STEP 2: Add in sour cream and vanilla. Add the eggs. 

STEP 3: Add dry ingredients and buttermilk.

STEP 4: Pour the batter into two 6-inch cake pans. Bake for 25-30 minutes. Cool completely.

STEP 5: Cream cheese frosting. Beat the butter and cream cheese. Add in powdered sugar. Add in vanilla, salt, and heavy cream.

STEP 6: Spread 3/4 cup of frosting over the first layer. Top with the 2nd layer. Put a thin layer of frosting over the entire cake. Freeze for 15 minutes.

STEP 7: Frost the rest of the cake. Pipe on additional frosting and sprinkles for decoration.
