This classic New York style cheesecake is a super creamy and rich cheesecake with a graham cracker crust. It has a strawberry sauce to go on top.

STEP 1: Mix graham cracker crumbs and melted butter. Press it into a springform pan and bake at 325°F for 11 minutes.

STEP 2: Beat cream cheese and sugar for 2 minutes. Add vanilla, sour cream, lemon juice, and cornstarch. Mix.

STEP 3: Add eggs and egg yolk. Mix them in until just combined on low speed.

STEP 4: Pour the batter over the crust. Place it in a water bath.

STEP 5: Bake for 70-80 minutes. Turn off the oven with the door cracked to let it cool slowly before removing it. Cool, then chill in the fridge overnight.

STEP 6: Cook sliced strawberries, sugar, cornstarch, lemon juice, and vanilla over medium heat. Let it thicken, then cool it before use.

STEP 7: Remove the cheesecake from the pan. Slice it and top it with the sauce before serving.
