Peach Cookies

These peach cookies are filled with both freeze dried peaches and roasted peaches. They are loaded with peach flavor and topped with roasted peach.

STEP 1: Cut peaches into slices and cubes. Season with brown sugar and cinnamon. Roast for 6-10 minutes. 

STEP 2: Combine the dry ingredients. 

STEP 3: Beat the butter and sugars. Add wet ingredients. 

STEP 4: Combine the dry and wet ingredients. Add cold peaches. 

STEP 5: Let the dough rest for 10 minutes while prepping the cookie sheets and preheating the oven.  

STEP 6: Scoop 2 Tbsp or 2 oz cookie dough balls. Place 6 cookie dough balls per sheet. 

STEP 7: Bake 1 tray at a time for 14-16 minutes until the edges are golden brown.
