Pineapple Sunshine Cake

This pineapple sunshine cake is the ultimate pineapple cake! This is a three layer pineapple cake, filled with a pineapple jam and topped with a pineapple cream cheese frosting!

STEP 1: Pineapple Cake. In a large bowl, mix the melted butter, oil, sugar, sour cream, vanilla, crushed pineapple, eggs, and buttermilk with a whisk.

STEP 2: Whisk in dry ingredients into the wet ingredients until just combined.

STEP 3: Pour batter into three prepared 8-inch cake pans. Bake for 20-25 minutes. Cool completely before decorating. 

STEP 4: Pineapple Jam. Over medium heat, mix crushed pineapple and sugar until thickened. Cool completely. 

STEP 5: Pineapple Cream Cheese Frosting.  Beat cream cheese and butter on high for 3 minutes. Mix in sifted powdered sugar on low. Add pineapple jam, vanilla, salt, and heavy cream on high. 

STEP 6: Assembly. Cut off domes. Spread 1 cup of frosting onto the 1st layer. Pipe frosting around the edge. Spread 1/2 of the jam over the layer. Repeat for the 2nd layer.  

STEP 7: Flip the last cake layer upside down. Freeze for 10 minutes. Frost and decorate.
