Pumpkin Caramel Cookies

These pumpkin caramel cookies are soft pumpkin cookies stuffed with caramel. They are rolled in cinnamon sugar and topped with more caramel pieces.

STEP 1: Place 12 caramels in the freezer. Meanwhile, sift flour, cinnamon, pumpkin pie spice, baking powder, baking soda, and salt.

STEP 2: Beat butter, brown sugar, and sugar on high speed for 2 minutes. Mix in pumpkin puree, vanilla, and egg yolk.

STEP 3: Mix in the dry ingredients you sifted earlier.

STEP 4: Scoop the cookie dough. Press your thumb into the dough ball and place a frozen caramel inside. Press the dough back over the hole.

STEP 5: Roll each cookie dough ball in cinnamon sugar. Place 6 cookie per cookie sheet.

STEP 6: Bake each cookie sheet for 13-15 minutes at 350°F.

STEP 7: Let the cookies cool in the hot pan for 15 minutes before transferring them to a cooling rack.
