Pumpkin Oatmeal Cream Pies

This fun pumpkin version of the Little Debbie's treat are perfect for fall! They are pumpkin spice oatmeal cookie sandwiches with marshmallow creme filling!

STEP 1: Sift the flour with the baking soda, salt, cinnamon, pumpkin pie spice, nutmeg, and oats.

STEP 2: Mix melted butter, sugar, brown sugar, vanilla, pumpkin puree, and egg yolk. Mix in the dry ingredients.

STEP 3: Scoop the dough and roll it in sugar. Flatten the dough balls slightly.

STEP 4: Bake 12 cookies at a time for 12-12 minutes at 350°F. Cool them.

STEP 5: Beat butter for 2 minutes. Mix in marshmallow creme, powdered sugar, vanilla, and salt.

STEP 6: Pipe the frosting on to half of the cookies. Place the other half on top to make the sandwiches.

STEP 7: Chill them oatmeal cream pies in the freezer for 10 minutes to set before serving.
