These pumpkin pie cookies are snickerdoodle cookies stuffed with pumpkin cheesecake filling. These cookies taste just like pumpkin pie in cookie form!

STEP 1: Mix together the wet ingredients. 

STEP 2: Fold in the dry ingredients. 

STEP 3: Use a cookie scoop to scoop the dough into balls. 

STEP 4: Roll the dough in cinnamon sugar and press a hole into the center. 

STEP 5: Bake for 9-11 minutes. Cool slightly and roll in cinnamon sugar again. 

STEP 6: Filling. Beat the cream cheese and pumpkin. Add remaining ingredients. 

STEP 7: Scoop a dollop of filling onto each cookie.
