S'mores Cupcakes

These S'mores cupcakes are moist chocolate cupcakes, filled with chocolate ganache, topped with a toasted marshmallow, and has graham cracker cream cheese frosting.

STEP 1: In a large mixing bowl, combine sifted flour, cocoa powder, sugar, baking powder, baking soda, and salt. 

STEP 2: In a separate bowl, mix the wet ingredients. Pour them into the dry ingredients and mix until just combined. 

STEP 3: Fill the muffin liners 3/4ths full and bake 16-18 minutes. Cool completely. 

STEP 4: Chocolate ganache. Heat heavy cream in a saucepan until steaming. Pour over chocolate chips. Let it sit for 2 minutes then stir together. 

STEP 5: Use a knife to cut a hole into the cupcakes. Fill cupcakes with ganache. Top with a marshmallow.  

STEP 6: Broil for 2-3 minutes until marshmallow is melted. Squish the marshmallow down and cool on a cooling rack.  

STEP 7: Graham cracker frosting. Beat cream cheese and butter on high for 3 minutes. Add in powdered sugar and fine graham crumbs. Add vanilla, salt, and heavy cream. Pipe onto cupcakes.
