Strawberry Blueberry Hand Pies

These blueberry strawberry pies are the perfect circle hand pies. They are easy to make and use store bought pie dough. They are full of a blueberry strawberry pie filling!

STEP 1: Jam Filling. In a medium sauce pan over medium heat, mix the strawberries, blueberries, cornstarch, sugar, cinnamon, lemon juice, and salt. Cook until thickened. Cool. 

STEP 2: Thaw the pie dough or remove from the refrigerator for 15 minutes. 

STEP 3: Roll out the dough one sheet at a time. Cut with a 3 or 3.5 inch biscuit cutter.

STEP 4: Roll out another sheet and repeat previous step.  Roll out the top layer to make slightly thinner. Cut 2 lines with a knife into the top circles. 

STEP 5: Make an egg wash to brush on edges of the bottom circles. Add 1 Tablespoon of berry filling on top and cover with the top circles. 

STEP 6: Prepare the pies by crimping the edges of the pies with a fork. Chill pies in the freezer while preheating the oven. 

STEP 7: Brush the pies with egg wash. Sprinkle course sugar on top. Bake for 15-19 minutes until golden. Cool before eating.
