Strawberry Ice Cream Cheesecake

This strawberry ice cream cheesecake is a no bake cheesecake that uses strawberry ice cream! It has a graham cracker crust, homemade whipped cream, and fresh strawberries.

STEP 1: Graham cracker crust. Blend graham crackers into a fine crumb. Mix together crumbs, brown sugar, and melted butter with a fork. 

STEP 2: Pour crumbs into the springform pan. Press the crumbs halfway up the side and compact the crust. Freeze until ready to use.

STEP 3: Strawberry Ice Cream Cheesecake. Beat cream cheese on high for 1 minute. Add sugar and vanilla and beat for another minute.

STEP 4: Fold in softened ice cream with a spatula until mixed together and liquidy.

STEP 5: Pour batter into 9 inch springform pan. Top with foil or plastic wrap and freeze for at least 12 hours. 

STEP 6: After 12 or more hours, remove foil, springform pan, and parchment paper. Place back in freezer until ready to top and serve.  

STEP 7: Whipped cream. Beat powdered sugar, heavy cream, and vanilla on high until stiff peaks form. Place whipped cream and frozen strawberries on top of frozen cheesecake.
