Strawberry Lemon Shortcake

This strawberry shortcake is a 9X9-inch lemon cake topped with whipped cream cheese and fresh strawberries. This is elevated strawberry shortcake.

STEP 1: Combine the dry ingredients. Set aside. 

STEP 2: Beat the butter, oil and sugar. Add the remaining wet ingredients. 

STEP 3: Alternate adding the dry ingredients and buttermilk to the wet ingredients and mix until combined.

STEP 4: Pour the batter into a prepared 9x9 pan and bake for 28-32 minutes. 

STEP 5: Beat the cream cheese and vanilla extract. Add powdered sugar. Set aside. 

STEP 6: Beat heavy cream until stiff peaks form. Fold together gently with the cream cheese mixture.  

STEP 7: Mix the strawberries with sugar. Top the cake with the whipped cream cheese and strawberries.
