Stuffed Carrot Cake Cookies

These carrot cake cookies are chewy and full of carrots and spices. These cookies are stuffed with cream cheese filling.

STEP 1: Mix the cheesecake filling ingredients. Freeze dollops of filling on a cookie sheet until solid.

STEP 2: Sift dry ingredients. 

STEP 3: Mix butter and sugars. Add remaining wet ingredients and grated carrot. 

STEP 4: Mix in dry ingredients. 

STEP 5: Scoop large cookie dough balls. Place the frozen filling into the dough and work the dough over it.

STEP 6: Freeze 10 minutes. Bake 6 cookie dough balls per prepared sheet for 13-15 minutes. 

STEP 7: Make frosting, add dye, and pipe onto the cookies.
