Tender Blackberry Cupcakes

These blackberry cupcakes are the most tender cupcakes! They are vanilla cupcakes that use a no calorie sweetener and are filled with a blackberry jam.

STEP 1: Beat butter and allulose sweetener. Add in sour cream, vanilla, and eggs. 

STEP 2: Combine the cake flour, baking powder, salt, and buttermilk with the wet ingredients.

STEP 3: Use a cookie scoop to fill the muffin tin 2/3 full. Bake for 15-17 minutes. Cool completely before decorating. 

STEP 4: Blackberry Jam. Heat blackberries, allulose sweetener, lemon juice, water, and salt. Cook for 8-12 minutes while stirring frequently. 

STEP 5: Once cooled, use a knife to cut a hole in the cupcake. Fill with the blackberry jam. 

STEP 6: Blackberry cream cheese frosting. Beat the cream cheese. Add in butter, powdered sugar, salt, and blackberry puree. Chill for 15 minutes.  

STEP 7: Frost the cupcakes decorate with fresh blackberries.
