White Chocolate Raspberry Cake

This white chocolate raspberry cake has three layers of vanilla cake filled with raspberry jam and white chocolate frosting. It combines tart raspberry with sweet white chocolate.

STEP 1: Beat butter, oil, and sugar. Mix in eggs, vanilla, and sour cream.

STEP 2: Mix in a bit of the cake flour, baking powder, baking soda, and salt. Alternate with adding buttermilk until it is all in. 

STEP 3: Pour the batter in three 8 inch cake pans. Bake them for 22-25 minutes at 350°F.

STEP 4: Heat raspberries and sugar on the stove. Cook them until it thickens. Cool the jam.

STEP 5: Beat butter. Add powdered sugar. Mix in vanilla, salt, and melted white chocolate. Beat it again.

STEP 6: Frost the first layer with 3/4 cups of frosting. Pipe a border on it and fill with 1/2 the jam.

STEP 7: Place the second layer on top and repeat STEP 6. Add the final layer and frost.
