White Forest Cake

This white forest cake is a three layered fluffy white cake. It is full of a cherry pie filling, white chocolate frosting and a white chocolate drip.

STEP 1: White Cake. Beat the butter, sugar, and oil on high for 3 minutes. Add in sour cream and vanilla until combined. Add egg and egg whites.  

STEP 2: Alternate adding 1/3 of the dry ingredients, and 1/2 the buttermilk until all added.  

STEP 3: Pour batter into 3 prepared cake pans. Bake for 22-25 minutes. Cool completely. 

STEP 4: Cherry filling. Over medium heat, mix cherries,  sugar, corn starch, lemon juice, cinnamon and vanilla. Mash cherries lightly with back of the spoon. Cool. 

STEP 5: White Chocolate Frosting. Beat butter on high for 3 minutes. Add in sifted powdered sugar. Add in white chocolate, vanilla, salt, and heavy cream. Mix until fluffy. 

STEP 6: White Chocolate Drip. Heat heavy cream in a saucepan until steaming. Pour over white chocolate chips. Let sit 2 minutes. Add white food coloring. 

STEP 7: Assemble the cake layers. Frost the crumb coat and freeze. Decorate the cake.
