Chewy Peanut Butter Cookies

These chewy peanut butter cookies are a no mixer and no chill recipe. They are really chewy peanut butter cookies dipped in cinnamon sugar.

Ingredients

  • 2 ¼ cups All-purpose flour
  • 1 teaspoon Baking soda
  • 1 teaspoon Salt
  • 1 cup Unsalted butter melted and cooled
  • 1 ¼ cup Brown sugar packed light or dark
  • ¼ cup White granulated sugar
  • 1 cup Peanut butter creamy peanut butter
  • 2 teaspoon Pure vanilla extract
  • 2 Large eggs room temperature

Cinnamon Sugar

  • ¼ cup White granulated sugar
  • 2 teaspoon Ground cinnamon

Instructions

  • Preheat the oven to 350°F. Line two cookie sheets with parchment paper and set aside.
  • In a large bowl, mix the melted butter (make sure it is room temperature!), brown sugar, and sugar. Add the peanut butter, vanilla, and eggs. Mix until combined and smooth.

  • Add the flour, baking soda, and salt. Use a rubber spatula to mix until combined.

  • In a small bowl, combine the sugar and cinnamon and set aside.
    ¼ cup White granulated sugar, 2 teaspoon Ground cinnamon
  • Use a large 3oz cookie scoop to scoop the dough. Place 6 cookie dough balls per cookie sheet.
  • Bake one cookie sheet at a time. Bake for 13-15 minutes.
  • Let the cookies sit on the hot pan for 5 minutes. Then, dip the hot cookie into the cinnamon sugar. Then, place on a cooling rack and allow it to cool.

Notes

Flour- Make sure flour is spooned and leveled or use a kitchen scale. Compacted flour can dry out the cookies and cause them not to spread.
High altitude baking- Add an extra 2 tablespoon of flour.
Pull out dairy ingredients 2 hours before baking.
