Fresh Strawberry Sheet Cake

This strawberry sheet cake uses both fresh and freeze-dried strawberries to get the flavor. It is a moist sheet cake with strawberry cream cheese frosting on top.

STEP 1: Strawberry Salsa. Place quartered strawberries into food processor and pulse until it looks like salsa. Set aside. 

STEP 2: Beat butter, oil and sugar on high for 3 minutes. Add in sour cream, vanilla and 1 1/3 cups of strawberry salsa. Add eggs one at a time. 

STEP 3: Alternate adding buttermilk and dry ingredients.

STEP 4: Pour into cake pan and bake for 45-55 minutes. Cool before decorating. 

STEP 5: Strawberry cream cheese frosting. Beat the cream cheese and butter for 3 minutes. Mix in powdered sugar.

STEP 6: Mix in strawberry salsa, vanilla, salt, and heavy cream.

STEP 7: Decorate the cake with cream cheese and extra strawberries.
