Preheat the oven to 350℉. Spray a 9X9-inch baking pan with baking spray. Line the bottom and 2 sides with parchment paper and spray again.
In a medium bowl, mix the flour, baking soda, and salt. Set aside.
1 2/3 cups All-purpose flour, 1/2 tsp Baking soda, 3/4 tsp Salt
In a separate bowl, mix the melted butter, brown sugar, sugar, vanilla, peanut butter, and eggs. Mix with a whisk until combined.
3/4 cup Unsalted butter, 3/4 cup Brown sugar, 1/3 cup White granulated sugar, 1 tsp Pure vanilla extract, 1/2 cup Peanut butter, 2 Large eggs
Pour in the dry ingredients and mix using a baking rubber spatula. Mix until all the dry ingredients are combined. Add in the oats, chocolate chips, and M&M's.
1 cup Quick oats, 3/4 cup Mini M&M's, 3/4 cup Mini chocolate chips
Transfer the cookie dough into the pan. Use the spatula to make sure it spread evenly. Top with extra chocolate chips and M&M's.
Bake for 27-32 minutes. Bake until the top is lightly golden brown. Place hot pan on cooling rack and cool completely before cutting. They will continue to cook as it cools.
