Monster Cookie Bars

These monster cookie bars are super chewy and easy to make. They are a soft cookie bar with peanut butter, quick oats, mini M&M's and mini chocolate chips.

Ingredients

  • 1 2/3 cups All-purpose flour
  • 1/2 tsp Baking soda
  • 3/4 tsp Salt
  • 3/4 cup Unsalted butter melted
  • 3/4 cup Brown sugar packed light or dark
  • 1/3 cup White granulated sugar
  • 1 tsp Pure vanilla extract
  • 1/2 cup Peanut butter creamy
  • 2 Large eggs room temperature
  • 1 cup Quick oats
  • 3/4 cup Mini M&M's plus more for topping
  • 3/4 cup Mini chocolate chips plus more for topping

Instructions

  • Preheat the oven to 350℉. Spray a 9X9-inch baking pan with baking spray. Line the bottom and 2 sides with parchment paper and spray again.
  • In a medium bowl, mix the flour, baking soda, and salt. Set aside.

  • In a separate bowl, mix the melted butter, brown sugar, sugar, vanilla, peanut butter, and eggs. Mix with a whisk until combined.

  • Pour in the dry ingredients and mix using a baking rubber spatula. Mix until all the dry ingredients are combined. Add in the oats, chocolate chips, and M&M's.

  • Transfer the cookie dough into the pan. Use the spatula to make sure it spread evenly. Top with extra chocolate chips and M&M's.
  • Bake for 27-32 minutes. Bake until the top is lightly golden brown. Place hot pan on cooling rack and cool completely before cutting. They will continue to cook as it cools.

Notes

Flour- Make sure flour is spooned and leveled or use a kitchen scale. Compacted flour can dry out the cookies and make them cakey.
High altitude baking- Add an extra 1 TBSP of flour.
Pull out dairy ingredients 2 hours before baking.
