This cherry pie filling is perfect to use with cakes, cupcakes, cookies, or with pie! It is made with fresh or frozen cherries and uses only 5 ingredients.

This cherry pie filling is easy to make and makes a great filling for many types of desserts. It also has a little bit of almond extract to set this filling apart.
To make it easier, you can also use frozen cherries!
I have tips and tricks and process photos to easily help you make this recipe! If you love cherry desserts, you have to try my white forest cake.

Tips for making the filling
Here are my tips, so yours turns out like this recipe!
- Tip 1: Make sure the fresh cherries are pitted. I ended up just using them whole, you can cut them in half if desired.
- Tip 2: Heat the cherries until their juices start to simmer. Then, use a masher to mash the cherries. See picture below.
- Tip 3: Heat until the filling is thickened. Which takes about 10 minutes.

Cherry Pie Filling
Ingredients
- 1 lb Cherries, fresh or frozen
- 1/2 cup White granulated sugar
- 1 TBSP Cornstarch
- 1 TBSP Water
- 1/4 tsp Almond extract
Instructions
- If you are using fresh cherries, make sure they are pitted. In a medium saucepan, add the cherries, sugar, cornstarch, water, and almond extract. Mix together.1 lb Cherries, 1/2 cup White granulated sugar, 1 TBSP Cornstarch, 1 TBSP Water, 1/4 tsp Almond extract
- Heat on medium heat. Heat until the juice from cherries start to separate and they soften. Use something to mash (like a potato masher) and mash the cherries until desired consistency. I mashed all the cherries so its more like a compote.
- Continue heating until cherry filling is thickened. It will equal to 1 1/2 cups of cherry filling. Pour into a bowl and cool completely. You can place in the fridge for faster chilling.

How much is needed to make a pie? Would I have to double it? Thanks, look delicious.
Yes I would 3x it for a 9 inch pie pan.
