Ingredient Notes for M&M Fudge Brownies

Here are some notes on the ingredients. For a full list of ingredients, check out the recipe card below.

  • Oil- Use canola oil or vegetable oil.
  • Unsalted Butter- Melt this before you need it so it can have time to cool.
  • Eggs- Take these out 2 hours before baking so they can get room temperature eggs.
  • Powdered sugar- For best results, be sure to sift this as clumps can cause gritty texture.
  • Unsweetened cocoa powder- I strongly recommend dutch process cocoa powder for a more rich chocolate flavor.
  • Chocolate chips- I used semi-sweet chocolate chips. I don’t recommend milk chocolate as they will be a little bit too sweet.
  • M&Ms- If you do not have both mini and regular size that is okay. I prefer the mix as you get more M&M per bite.

Ingredient Substitutions

  • Dairy free- You can use your favorite dairy free options for this recipe!
  • Gluten free- I haven’t tested this gluten free. Let me know if you do.

Step By Step Instructions

Here is how to make and bake these M&M brownies.

STEP 1: Prep. Preheat the oven to 350ยฐF. Meanwhile, spray a 9X9 inch baking pan with baking spray. Line the bottom of the pan with parchment paper and spray it again.

STEP 2: Dry ingredients. Mix the all purpose flour, cocoa powder, cornstarch, and salt in a medium bowl. Set it aside.

STEP 3: Beat sugar and eggs. Use a mixer to beat the granulated sugar, powdered sugar, eggs, and egg yolks on high speed for 2 minutes.

STEP 4: Wet ingredients. Add the melted butter, oil, and vanilla extract to the butter mixture. Mix them in on low speed until combined. Then, add the dry ingredients and mix them in on low speed until combined.

STEP 5: Add candies. Add the chocolate chips, M&Ms, and mini M&Ms. Mix them in with a rubber spatula.

STEP 6: Pour batter. Pour the batter into the prepared pan in an even layer. You may optionally add more M&Ms on top of the brownie batter. This makes sure there are more visible on the top of the brownies.

STEP 7: Bake brownies. Put the baking pan in the oven to bake for 35-40 minutes. It is done when the edges are set, but the middle is still slightly under done. It will finish baking as it cools.

STEP 8: Cool and serve. Place the hot pan on a cooling rack and let it cool completely before removing the brownies and cutting them into squares.

Expert Baking Tips

  • To make brownie recipes more fudgy you include more egg yolk and cornstarch.
  • The extra egg yolk adds more fats to the recipe which helps give that moist and soft texture compared to the tougher, more cakey texture from the gluten in the flour.
  • The cornstarch helps by breaking down the gluten strands from the flour as well leading to a more fudgy brownie.
  • When doing the toothpick test make sure that there is not wet batter. If there is you need to bake them for a few more minutes. There should be moist crumbs, but no batter.

FAQ

Why did my brownies sink?

This means that the brownies were too under done. You will probably have extremely fudgy brownies. Bake the pan of brownies again for another 5-10 minutes to cook them more.

My brownies are very hard.

This means the brownies are over baked. Make sure when you bake these, the center is slightly under done. You should get moist brownie crumbs when testing with a toothpick.

Can I make this in an 8X8 pan?

Yes you can. It will just make thicker brownies. They will require more bake time than a big pan due to being thicker.

Recipe Variations

  • Reese’s Pieces Brownies- You can replace the M&Ms with Reese’s Pieces, or even combine both for one super brownie!
  • Alternative M&M types- You can substitute in your favorite type of M&Ms such as peanut M&Ms or seasonal varieties.

Storing and Freezing

Store these fudgy M&M brownies in an airtight container like a cake carrier. Store at room temperature up to 5 days. You can heat them slightly in a microwave or oven for warm brownies.

You can freeze the fudgy M&M brownies in individual brownie slices. Place in an airtight container and freeze up to 30 days.

Ingredients
 
 

  • 1 1/2 cups White granulated sugar
  • 1/2 cup Powdered sugar
  • 3 Large eggs, room temperature
  • 1 Egg yolk, room temperature
  • 1/2 cup Unsalted butter, melted
  • 1/2 cup Oil, canola or vegetable
  • 1 tsp Pure vanilla extract
  • 1 cup All-purpose flour
  • 1 cup Unsweetened cocoa powder
  • 1 TBSP Cornstarch
  • 1 tsp Salt
  • 1/3 cup Semi-sweet chocolate chips
  • 3/4 cup M&M's
  • 1/2 cup Mini M&M's

Instructions
 

  • Preheat the oven to 350โ„‰. Spray a 9X9 inch baking pan with baking nonstick spray. Line the bottom and two sides of the pan with parchment paper. Spray again.
  • In a medium bowl, mix the flour, cocoa powder, cornstarch, and salt. Set aside.
    1 cup All-purpose flour, 1 cup Unsweetened cocoa powder, 1 TBSP Cornstarch, 1 tsp Salt
  • Using a mixer, beat sugar, powdered sugar, eggs, and egg yolks on high speed for 2 minutes.

  • Add in the melted butter, oil, and vanilla. Mix on low until combined. Add in the dry ingredients and mix on low speed until just combined.
    1/2 cup Unsalted butter, 1/2 cup Oil, 1 tsp Pure vanilla extract
  • Take off the mixer, add chocolate chips, M&M's, and mini M&M's. Use a baking rubber spatula to mix these in.
    1/3 cup Semi-sweet chocolate chips, 3/4 cup M&M's, 1/2 cup Mini M&M's
  • Pour the batter into the pan. Spread evenly. Optional: Top with extra M&M's
  • Bake for 35-40 minutes. Bake until the edges are set, but the middle is underdone. It will finish baking as it cools.
  • Place the hot pan on a cooling rack and cool before removing and cutting into the squares.

Notes

Flour- Make sure flour is spooned and leveled or use a kitchen scale. Compacted flour can dry out the brownies and make them cakey.
High altitude baking- Add an extra 1 TBSP of flour.
