Why This Recipe Works
- Drop cookies- A lot of brookie recipes are made in a square pan, however this recipe are actually cookies! They are next level!
- Oreo brownie cookies- This brownie cookie dough is super chocolatey and full of chocolate chips and Oreos. It gets swirled into the cookie dough, but it still gives a crinkle top.
- Oreo chocolate chips cookie- This is a chewy cookie full of Oreos and chocolate chips. This cookie helps to give the brookie those crisp edges. They are like fudgy brownie cookies!
- Swirled cookies- To swirl these cookies, you use two scoops of each dough and use your hands to swirl them together.
- Chewy texture- The chewy centers are the best!
Ingredient Notes
Here are some notes on the ingredients. For a full list of ingredients, check out the recipe card below.
- Chocolate Bar- I used Lindt 70% dark chocolate bar. Use a high quality chocolate and melt it in the microwave. Let it cool slightly before adding, so it doesn't melt the butter.
- Unsweetened cocoa powder- For best results, use a dutch-process cocoa powder like this one. This will give you a rich chocolate taste.
- Unsalted butter- For the brownie cookies, pull it out 2 hours before baking so it is room temperature. For Oreo cookies, the butter should be melted and cooled. If the butter is too hot, then the cookies will spread.
- Brown sugar- I used light brown sugar.
- Eggs- Pull the large eggs out 2 hours before baking.
- Chocolate chips- I recommend semisweet chocolate chips or dark chocolate chips. I don't recommend milk chocolate chips because it will be too sweet.
- Oreos- Use regular Oreos. I don't recommend double stuff Oreos because it will too much moisture.
Step By Step Instructions- Oreo Chocolate Chip Cookie Dough
Here is how to make and bake these cookies. This recipe needs a stand mixer with a paddle attachment or a hand mixer (electric mixer) for the brownie cookie batter. The Oreo chocolate cookies doesn't need a mixer and can be made by hand.
Start with Oreo chocolate chip cookie cookie dough first, then do the brownie cookie dough brownie batter.
STEP 1: Mix dry ingredients. In a medium bowl, mix the all-purpose flour, baking powder, baking soda, and salt.
STEP 2: Mix the wet ingredients. In a large bowl using a rubber spatula, mix the melted butter, brown sugar, white sugar, vanilla extract, and egg.
STEP 3: Add flour mixture. Next, add the flour mixture, Oreo crumbs, Oreo pieces, and chocolate chips. Set the cookie dough aside while you make the brownie cookie dough.
Step By Step Instructions- Oreo Brownie Cookie Dough
STEP 1: Melt the chocolate. First, melt the chocolate in the microwave until it is melted. Then, let it cool while you make the cookie dough.
STEP 2: Mix the dry ingredients. Next, mix the flour, cocoa powder, baking powder, and salt together.
STEP 3: Mix the wet ingredients. Using a mixer in a large bowl, beat the butter, brown sugar, and sugar on high speed for 2 minutes. Then, add in the vanilla and melted chocolate and beat on high for 1 minute.
Next, add in the egg and beat that again for 1 minute.
STEP 4: Add the flour mixture. Then, add in the flour mixture, chocolate chips, Oreo crumbs, and chopped Oreos and mix on low speed until just combined.
Chill the dough brownie cookie dough only for 10-15 minutes while the oven preheats. It needs only a short chill time.
STEP 5: Scoop the dough. Use 1 oz cookie scoop and scoop all of the brownie cookie dough on a plate, and all of the Oreo chocolate chip cookie dough on a plate.
Then, take one of each type of cookie dough and use your hands to roll them together. I will flatten them together slightly, and use my fingers to pinch and twist the doughs together before rolling.
This allows the cookie doughs to swirl together first being two halves.
STEP 6: Bake. Place 6 large cookie dough balls per cookie sheet. (They should have parchment paper on the cookie sheets.) Bake one baking pan at a time for 13-15 minutes until the edges are golden.
Top the cookies with extra chocolate chips and large pieces of Oreos and cool on a cooling rack.
Expert Baking Tips
- Flour- Make sure the flour is spooned and leveled. If you stick the measuring cup directly into the flour, it will compact the flour. Compacted flour can cause the cookies to not spread.
- If the cookies are spreading, make sure you are using parchment paper on the cookie sheet and the butter needs to be room temperature and not warm. If the cookies are still spreading too much, add an extra 2 Tablespoons of flour. This will help with the spread.
- The cookies should be slightly underdone, because they will continue to cook as they cool. This helps to make sure they have chewy centers.
